One of my New Year's resolutions was to make sure I post at least one recipe a week on my blog. Although I am VERY determined to fullfill that resolution, sometimes life can get in the way of cooking! My husband and I have finally decided to put our house on the market, and look for a larger "forever" home. So for the past 3 days I have been "decluttering" my tiny house to make it worthy of showing. You don't realize how much stuff you have until you start packing it up! I decided to go ahead and pack anything that we don't use on a regular basis. Four LARGE tubs and 1 1/2 HUGE rolls of bubble wrap later, my kitchen is decluttered!!! Now I only have the rest of the house.....sigh.
Anyway, with the HUGE task of getting our house ready to put on the market, we will be eating frozen pizzas, hamburgers, and take out for the next few days. I am still determined to post at least one recipe a week, so here is a sweet treat for you. There is no picture of course, since I haven't actually made this one in a long while, but it is definitely post worthy with or without the picture! ENJOY!
Devil's Food Cake Supreme:
1 devil's food cake mix
WHITE ICING:
1 stick butter
1/2 cup vegetable shortening
1 cup powdered sugar
8 tablespoons all-purpose flour (one at a time)
2/3 cup milk (at room temp)
1 teaspoon vanilla extract
CHOCOLATE CANDY ICING:
1 stick butter
2 cups sugar
3 tablespoons baking cocoa
1/2 cup pet milk
1 teaspoon vanilla extract
Bake cake as directed in 2 layer cake pans. With white icing, ice between layers, and entire outside. Pour chocolate icing over top and refrigerate.
WHITE ICING:
Cream butter, shortening, and vanilla. Add other ingredients a little at a time. Beat until creamy.
CHOCOLATE CANDY ICING:
Stir constantly in a heavy saucepan on medium heat. Bring to a boil for 1 minute, stir until thick.

KEY LIME CAKE
About eight years ago, my husband brought home a recipe for this cake. A wife of one of the men he worked with, brought this cake to them at work, and he LOVED it! Now, I'm not a big fan of strong lemon or lime anything, so I told him I would make one for just for him. Well......eight years later, I made good on that promise! In my defense, I lost the recipe, and recently found it in an old recipe box that was packed up in our shed. If you like lemon and lime, you will LOVE this cake. It is very moist, and full of lemony/lime flavor! Although it's not my favorite, it is really good.
Key Lime Cake:
1 box Duncan Hines Lemon Supreme Cake
1 small package instant lemon pudding mix
4 eggs
1/2 cup water
1/2 cup vegetable oil
1/2 cup key lime juice
Mix all ingredients for 4 minutes. Bake in a 9x13 greased and floured pan for about 25-27 minutes, at 350 degrees or until toothpick comes out clean. (This is also very pretty baked in a bundt pan!)
GLAZE:
2 cups powdered sugar and 1/3 cup key lime juice. Mix and pour over cake while it is still hot.

FRESH STRAWBERRY CAKE
First of all, I want to wish my husband a Happy Birthday. Actually it was yesterday, but I failed to get this posted until today. I made this cake for his birthday cake. It was very moist and yummy. If you like strawberries, I highly recommend this cake. With strawberries in the cake, and in the icing, what's not to love?
Fresh Strawberry Cake:
1 box white cake mix
1 3oz box strawberry geletin
3/4 cup oil
4 eggs
1 cup crushed fresh strawberries
In a large bowl, add all ingredients. With a hand mixer, beat until combined. Pour into a greased 9x13 cake pan. Bake at 350 degrees for 30 minutes or until toothpick inserted into center of cake comes out clean. Cool completely.
Frosting:
1/2 cup butter (softened)
1 lb powdered sugar (I didn't use quite this much, it made it too sweet!)
1/4 cup crushed strawberries.
1/2 tsp. vanilla
Beat together butter, powdered sugar, and vanilla. Fold in strawberries. Mix well. Spread over completely cooled cake.

DERBY DAY!!
It's Derby Day here in "My Old Kentucky Home", so I wanted to post a recipe to celebrate! I searched several other blogs, and everyone was posting the obvious Mint Julep, Derby Pie, etc....etc.... So I thought I would do something a little different. I found this recipe on allrecipes.com after serching "Kentucky Derby", and I thought it sounded really good....and YES it is VERY yummy! So here it is KENTUCKY BUTTER CAKE:
3 cups all-purpose flour
2 cups white sugar
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 cup buttermilk
1 cup butter, softened (not melted!)
2 tsp. vanilla
4 eggs
Butter Sauce:
3/4 cup white sugar
1/3 cup butter
3 tbs. water
2 tsp. vanilla
Preheat oven to 325 degrees. Grease and flour a 10 inch Bundt pan. In a large bowl, mix the flour 2 cups sugar, salt, baking powder, and baking soda. Blend in buttermilk, 1 cup of butter,2 tsp vanilla and eggs. Beat for 3 minutes at medium speed. Pour batter into prepared pan. Bake in preheated oven for 60 minutes, or until a wooden toothpick inserted into center of cake comes out clean. Poke holes in the still warm cake. Slowly pour sauce over cake. Let cake cool completely before removing from pan. To make Butter Sauce: In a saucepan, combine the ingredients for the butter sauce. Cook over medium heat until fully melted and combined. DO NOT BOIL.
*The original recipe said to use a fork to poke the holes, but I was afraid the sauce would only saturate the bottom of the cake. So I used the end of a wooden spoon to poke the holes. This worked great!

YUMMY PUDDING CAKE
This recipe originated from Beth's Favorite Recipes, but I tweaked it a bit to make it my own. Her recipe uses chocolate cake, chocolate pudding, and chocolate chips. For those who know me best, you know I like chocolate, but not THAT much chocolate!!! You also know I would rather have peanut butter any day, but I do like chocolate and peanut butter together! Reeces Cups YUMMOLICIOUS!!! So I took that idea and ran with it. Here is what I came up with, and it was sooooooooo good and moist! Hope you give this one a try.
Pudding Cake
1 small pkg instant chocolate pudding
2 cups milk
1 devil's food cake mix, dry (or any chocolate cake mix)
2 cups Reeces peanut butter chips
Mix 2 cups milk with the pudding mix. Add the dry cake mix and mix well. Spread into a greased 9x13 pan. Sprinkle with peanut butter chips and bake for 30 minutes at 350 degrees.
