PEANUT BUTTER NO BAKE COOKIES

2 cups sugar
1/4 cup margarine
1/2 cup milk
1 cup peanut butter
1 tsp vanilla
3 cups oats

In a large saucepan, mix sugar, margarine, and milk; bring to a full, rolling boil over medium heat.  Boil for one minute, stirring constantly.  Remove from heat and stir in peanut butter and vanilla, stirring until peanut butter is melted; stir in oats.  Working quickly, drop by spoonfuls onto waxed paper.

DAD'S FAVORITE COOKIES

On May 29th 2010, my Dad passed away.  He would have celebrated his 74th birthday on August 8th.  For those of you who knew my Dad well, you know he LOVED coffee!  More than that, he loved peanut butter cookies dipped in his coffee.  So in memory of my Dad, my son and I baked a batch of peanut butter cookies on his birthday.  I used a recipe I found a few years ago on allrecipes.com.  Of course I modified it just a bit, but the end result was soooo good!
The Whole Jar of Peanut Butter Cookies:

1/2 cup butter, softened
1/2 cup butter flavored crisco
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 egg yolk
2 teaspoons vanilla extract
1 18-ounce jar peanut butter
2 cupss all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped peanuts (optional)

In a large bowl, cream butter, crisco, white sugar, and brown sugar until smooth. Add the eggs, egg yolk, and vanilla; mix until fluffy. Stir in peanut butter. Sift together the flour, baking soda, and salt, stir into the peanut butter mixture. Finally, stir in the peanuts if desired. Refrigerate the dough for 1 hour.
Preheat oven to 350 degrees, lightly grease cookie sheets.
Roll dough into walnut sized ball. Place on the prepared cookie sheets and flatten slightly with a fork. Bake for 12-15 minutes in the preheated oven. Cookies should look dry on top. Allow to cool for a few minutes on the cookie sheets before removing to cool completely on a rack. These cookies taste great when slightly undercooked.

YUMMOLICIOUS COOKIES!!!













Hey guys, Zach and I tried a new cookie recipe today "Dishpan Cookies". I found this recipe on the Southern Plate website a few days ago, so when I got my groceries yesterday, I picked up the ingredients to make them. I will warn you....this makes ALOT of cookies especially if you drop by the spoonfuL!!! The recipe says to drop them using a 1/4 cup measuring cup, but I really didn't want my cookies that big, so I used my Pampered Chef medium scoop, and they came out just the right size. I still got about 50 or so cookies.....so much for the diet!!! Anyway, here is the link to the recipe, I hope you try these soon. I'm sure you will love them just as much as we do! :)
